But with a tiny tweaking, I found that this recipe is not only quick and easy but delicious and healthy.

Ingredients

The ingredients I found on the site are listed below:

  • Olive or canola oil (or vegetable oil spray)
  • Whole chicken breasts split, skinned, and boned
  • A cup of Picante sauce
  • Four tablespoons of chopped green onion
  • 1/2 teaspoon ground cumin
  • 8 pieces of 7-8 inch flour tortillas, toasted
  • 1 cup shredded Monterey Jack or Cheddar cheese

Instructions

Heat tortillas in the oven at 350 degrees for about 15 minutes (Or reheat in the microwave and wrap loosely in paper towels). Pat chicken until about 1/2 inch thick. Brush with oil and sprinkle with salt and pepper; mix well. Roll up well and place in pan, seam side down. Remove toothpick, plate, and serve.

Healthier Substitutes

taquitoNo recipe could become one of my favorites if I couldn’t modify it to a healthier version! I have found the items that come in to be fantastic additions or variations. By the way, the recipe didn’t call for spraying the flutes or drizzling them with oil, but I thought they were crispier that way. A great way to serve the flautas is to cut them in half and then add salsa, guacamole, or salsa to the center in a small pile or bowl.
